Sundried Tomato SalsaYou will need:

  • 1 cup chopped sundried tomatoes
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons minced garlic
  • 1 red onion, minced
  • 1/2 chopped green or yellow bell pepper
  • 1/2 cup fresh basil leaves, chopped
  • 1/3 cup capers
  • Salt and freshly ground black pepper to taste

Place dried tomatoes in a glass or ceramic bowl and cover with oil and vinegar. Cover and refrigerate 2 hours to allow tomatoes to rehydrate. Remove and add remaining ingredients, tossing well. Cover and chill another 2 hours before serving. Serve with Frito Lay Tostidos Gold chips.
