Roasted Chicken Salad

Roasted Chicken Salad

You will need:

  • 4 cups coarsely chopped roasted chicken
  • 3 green onions, chopped
  • 1 celery stalk, chopped
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons lemon juice
  • 2 teaspoons salt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chopped fresh dill
  • 1/4 teaspoon black pepper
  • Sliced tomatoes
  • Lettuce

In a large bowl, stir together the chicken, onions, and celery. In a separate bowl, whisk together the mayonnaise, sour cream, parsley, juice, salt, mustard, dill, and pepper until smooth. Add to the chicken mixture and toss to evenly coat. Cover and refrigerate at least 1 hour.

Serve with sliced tomatoes and lettuce as a salad or on slices or whole wheat bread.

Yield: 4 servings
