Southern Fried Onion Rings

Souther Fried Onion Rings

You will need:

  • 1 quart vegetable oil
  • 1 large onion, peeled and cut in 1/4-inch to 1/2-inch slices
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt plus extra for serving
  • 1/4 teaspoon white pepper
  • 1 egg
  • 1 cup milk
  • 3/4 to 1 cup panko or coarse unseasoned bread crumbs

Place the oil in a large pot and place over medium heat. Attach a deep fat thermometer and bring to 350°F.

Meanwhile, separate the onion slices into rings. Combine the flour, baking powder, 1 teaspoon of salt, and white pepper in a shallow dish. Coat the onion rings in the flour mixture.

In a separate shallow dish, whisk together the egg and milk. Dip each floured onion ring into the egg mixture. Drain on a wire rack placed over a jellyroll pan. Add the panko to the flour dish and dip the rings completely in panko.

Working in batches, drop the rings into the hot oil. Fry 1-1/2 to 2 minutes or until golden brown. Drain on paper towels and sprinkle with additional salt if desired. Serve warm.
