Caramelized Onion & Mushroom Triangles
You will need:
2 tablespoons Purity butter
1-1/2 cups coarsely chopped onions
3/4 cup chopped Monterey mushrooms
1/3 cup chopped Moody Dunbar roasted peppers2 tablespoons chopped black olives
1/4 teaspoon salt
1 package puff pastry dough
1/2 cup Purity butter, melted
1/2 cup spreadable garlic and herb cream cheese
Heat oven to 350 degrees. In a 10-inch skillet, melt 2 tablespoons of butter and add onions. Cook over medium heat, stirring occasionally, until onions are golden and caramelized (around 7 minutes). Stir in mushrooms, peppers, olives and salt. Continue cooking until heated through and set aside. Cool at least 10 minutes.
Place one sheet of puff pastry dough on a dry work surface. Brush with melted butter. With a sharp knife, but dough into 4-inch squares. Repeat with remaining sheet of dough. In the center of each square, place one heaping teaspoon of onion mixture. Top with 1 teaspoon of cream cheese. Pull corners together to form a triangle. Repeat with remaining squares. Place on ungreased cookie sheets. Bake for 20 minutes or until golden brown. Serve warm.
Yield: 24 appetizer servings
Note: Filling can be made one day ahead and refrigerated.
