Peppery Party Cups
You will need:
6 ounces soft goat cheese
2 tablespoons toasted pine nuts or chopped pecans
1 ear sweet corn, cut from the cob
2 tablespoons finely chopped red bell pepper
2 tablespoons chopped fresh cilantro
1 garlic clove, minced
1/4 teaspoon hot sauce
1/4 teaspoon salt
3 large Bibb or romaine lettuce leaves
In a mixing bowl, combine the cheese, nuts, corn, peppers, cilantro, garlic, hot sauce and salt. Mix thoroughly. With the inside of the lettuce leaf up, carefully spread the cheese mixture on each leaf. You may have to break the center rib. Starting at the base, tightly roll up each leaf. Tie wraps with fresh chives to secure. Refrigerate until ready to serve.
Yield: 3 to 6 servings
Note: Can be made up to 8 hours ahead of time.
