Shiitake & Havarti Cheese Crostini

You will need:

  • 1 loaf crusty French bread, baggett or sourdough
  • 1 lb Fresh Shiitake caps, sliced thin
  • 8 oz Havarti cheese
  • 1/2 medium sweet onion
  • 1/4 cup extra virgin olive oil
  • pinch fine ground black pepper to taste
  • pinch sea salt to taste

Slice bread into ½” slices, toast lightly. Set aside.

Slice onion across bulb in 1/16”-1/8” slices.
Slice shiitake caps 1/8” thick.

In a sauce pan combine olive oil, shiitake mushrooms and onions. Sauté until onions are softened and mushrooms have cooked down to about half their original size. Remove from heat.

Using tongs, apply a generous dollop of the mushroom/onion mixture, pausing briefly to allow excess liquid to drain off before topping each piece of bread.

Using a cheese knife cut thin slices of Havarti cheese and top mushroom and onion mixture on each slice of bread. Arrange bread slices on a baking sheet and bake at 350F until cheese is melted and bread is starting to brown. Serve warm. Caution! Highly addictive!

These can be made ahead of time and frozen for up to six months. Just take them from the freezer and pop them in a 350F oven until the cheese melts.
