Additional Information: BIO TURNROAD LLC, DBA (TurnRoad Jerky) started in late April 2022. We are a small and rising company specializing in handmade, hand-cut artisan beef jerky and all natural beef dog treats. Shadow May(Owner and Founder) has been making jerky for over a decade and started out making deer jerky in his home for snacks and gifts for friends and family. For two years he was giving it away to fellow co-workers while working in manufacturing at Volkswagen, all-the-while testing and refining new flavors. What better place to have a test audience taste and critique your jerky than 40 hungry, hard working men? Soon, the idea of selling hand made jerky turned into the active pursuit of building a business. We painstakingly remodeled a small building into a commercial kitchen and were granted permits and licenses through the Tennessee Dept. Of Agriculture. After having our original 5 flavors validated by a microbiology lab in Nashville, Tennessee, we began to manufacture our handmade, artisan beef jerky. Two years after starting with an idea and a dream and after many, many tired nights, we now have a store where we sell our beef jerky in Chattanooga, Tennessee. We also have the pleasure of traveling around the state, participating in farmers and artisan markets, music festivals, home shows, rodeos, craft fairs and many other events. We have met and continue to meet so many wonderful people in our community that support our business and help us build our brand. It is truly a dream come true. The name ‘TurnRoad’ is derived from the very real personal experience that life is not lived in a straight line, but rather in a series of turns that eventually lead you to where you're supposed to be at that certain time. In other words, the “road of life” has no shortcuts and whether all the turns along the way may seem so or not, it is just as it should be. Process We get our beef from the Omaha Beef Company in Omaha, Nebraska. This is a well established cattle company that provides grain fed cattle for a “pasture to plate” experience. TurnRoad Jerky also works with local carnicerias, local gardeners, local grocery stores and a national distributor to obtain ingredients for our homemade marinades. Each marinade is unique and requires its own special attention. For example, our Jack-Knife Jalapeno, Howlie Habanero and Grateful Garlic marinades are made from fresh ingredients, herbs and spices and refrigerated until introduced to our hand cut beef. We use custom, handcrafted knives that have been purchased from some of our favorite artisan forgers around the nation to cut, chop and slice our beef. Our jerky is cut both with and against the grain to give each bite of jerky an authentic eating experience. We have commercial dehydrators where our deliciously marinated beef is carefully placed and dehydrated for approximately 5-7 hours (depending on the flavor). It is carefully watched throughout this process to ensure that it is not too soft or chewy and not too dry and crispy…it's just right. All our butchering and marinade making on dedicated days when the store is closed to ensure proper food safety. We roughly yield about 70 pounds of jerky per cut of prime beef that is then bagged, labeled and vacuum sealed in-house by our TurnRoad team members. We are a small, family oriented business that strives to give back to and support our local community. We received USDA certification in June 2023.
